Whole30 #2, Day 11

Today, I went to a family get-together for lunch. It was nice, but I started feeling not so great, so I left early, came home, and took a nap, and feel better now, but still not so great. I'm hoping getting to bed early tonight will help. I'm not really sure what's wrong, just kind of felt blah, maybe I ate something that didn't agree with me or something. Or maybe it's just that I haven't been sleeping well. Or maybe it's my body's last ditch effort to get me to eat sugary stuff. Who knows. It sucks, though, because when I got up, even though I got up earlier than I have been lately, I felt great. Energetic even. Hopefully I'll be over it in a day or two.

Anyway, here's what I ate (breakfast and supper anyway, no pics of lunch):

Breakfast -- Green eggs (eggs & spinach, run through the blender. Yes, I'm 38 years old and still prefer my spinach hidden in the eggs, not separate. Don't judge.) and a banana
Lunch -- I made modified versions of  Sunshine Sauce and Bora Bora Fireballs to take to the lunch. The Sunshine Sauce was a too spicy for my taste as written (or maybe I measured something wrong, I don't know), so I left out the pepper flakes. Also, I used almond butter because I didn't have sunbutter, and white wine vinegar because I didn't have rice vinegar. Well, I had rice vinegar, but got home from the store with it and realized it had added sulfites, so couldn't use it. I thought I read the label before I bought it, but apparently I didn't read it very well. And I added a bit of pineapple juice. For the Fireballs, I used turkey instead of pork, since I was taking it to share and some people don't eat pork, but most people don't object to turkey. I wasn't sure how the coconut coating would hold up in this kind of setting, but wanted the coconut flavor, so I shredded it even more in my Ninja until it was very small, and then mixed it in. And I didn't use the full amount of the cayenne. I probably could have used more than I did, but after tasting the sunshine sauce, opted to err on the side of it being too mild, just in case it got too overpowering. 

So basically, lunch was the meatballs and sauce, and some carrots and cauliflower and fruit. And when I got home, a banana. No, it wasn't an ideal snack, but I didn't feel good, and it seemed like it would help. 


Supper -- leftover meatballs from lunch on a salad with more sunshine sauce, but thinned a bit with some mayo.
